No-Bake Energy Bites

No-Bake Energy Bites

These are, in one word, epic!  They are so easy to make and my family loves them.  Great for a grab & go snack!  I found this recipe on Money Saving Mom, however the original recipe is from Smashed Peas and Carrots.

Ingredients 
  • 1 cup oatmeal
  • 1/2 cup peanut butter(or any other nut butter; all natural works best)*
  • 1/3 cup honey
  • 1 cup coconut flakes
  • 1/2 cup ground flax seed
  • 1/2 cup mini chocolate chips(Ghirardelli Semi-Sweet Chips are dairy free!)
  • 1 tsp vanilla
Mix everything together in a medium bowl until thoroughly incorporated.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls and enjoy.  Store in an airtight container and keep refrigerated for up to 1 week.  Makes 18-20 bites.

* I found mine to be a bit dry so I added another 1/4 cup of Peanut Butter.
