Healthy Fried Rice


 Healthy Fried Rice


Fried rice has always been one of my favorite side dishes.  I love the flavor, the texture and how easy it is to make.  What I didn't like about the traditional recipes was white rice and tons of salt, mainly from the soy sauce. I experimented a lot and finally came up with a recipe my family thinks is pretty good.  It's made with brown rice, canola oil & low sodium soy sauce.  Hope you enjoy it!

Ingredients                                                            Please ignore the butter in this picture.  It was for another recipe.
  • 3 cups of cooked brown rice, chilled(1 cup uncooked equals about 3 cups cooked)
  • 3 tablespoons canola oil 
  • 1/4 onion, chopped
  • 1/2 cup frozen peas, thawed
  •  1/2 cup carrots, chopped(I was out of them)
  • 1/2 teaspoon garlic powder or 2 cloves of garlic, minced
  • 3 large eggs, lightly beaten
  • 2 tablespoons low sodium    soy sauce
  • salt & pepper to taste
  • 1/2 cup pineapple chunks, optional


 Directions




Warm oil over medium heat.  Add onions and carrots. Cook for a few minutes until onions begin to become translucent.  
Add peas and cook for 2 minutes.









Add chilled rice, garlic powder and soy sauce.  Salt & pepper to taste. Stir well to mix ingredients.
Allow to cook for about 1 minute before stirring.  Cook 1 more minute and stir.  Repeat until heated through.






Move rice to one side of the pan.
You may need to add a bit of oil at this point.  Pour eggs into pan and scramble them. Mix into the rice when done.  I like to leave mine a bit runny and mix them into the rice to cook the rest of the way.









 Optional Step:
Add pineapple chunks  into rice and allow them to warm for 2-3 minutes, stirring occasionally.








This recipe feeds a family of 4 and there are always leftovers.  This recipe can be cut in half easily.  It also reheats nice and is a next day lunch favorite of the hubster's.  I'm not an expert on Asian food so let me know if there are any improvements that can be made.
