Grilled Chicken & Pineapple
Grilled Chicken & pineapple is a tried & true recipe for our family. We absolutely love it! I stumbled across this recipe a few years ago on the Dole website. I've been making it ever since. Delish & nutrish! I've made a few small tweaks to the recipe. We serve it with my & Healthy Fried Rice and steamed veggies.
Ingredients
- 1 can(20 oz.) Pineapple Slices, packed in 100% juice
- 2 tablespoons lemon juice
- 1 tablespoon canola or olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 5 boneless, skinless chicken breasts
Directions
Drain pineapple slices, reserve juice.
Combine reserved pineapple juice, lemon juice, oil and seasoning in a non-metallic bowl. Stir until mixed well.
Reserve 1/4 cup of marinade.
Place a gallon sized Ziploc bag inside a bowl. Fold the opening of the bag down 2 inches. Place chicken inside bag and cover with marinade.
Squeeze as much air as possible out of the bag and seal. Leave bag inside of the bowl to catch any leaks.
Marinate in refrigerator for 2-4 hours. You can probably let it marinate overnight, but I haven't tried that yet. Discard all remaining marinade.
Grill or broil chicken, brushing with reserved marinade occasionally, for 5-10 minutes on each side or until chicken is no longer pink in center. Add pineapple to grill during the last 4 mins. Cook for 2 minutes, turn and cook 2 more minutes. Discard any remaining marinade.
