6 Week Freezer Cooking Challenge-Week #3 Game Plan

 
 
Are you having fun with this challenge yet?  I sure am!  I'm looking forward to having a more productive week this time around.
 
 

My Week #3 Game Plan

Southwest Roll-Ups:  Since I did not get around to making these last week, I decided to put them back into the plan this week.  They are super yummy & easy to reheat for dinner!  The recipe can be found at Money Saving Mom.
 
Pizza Dough:  Again, I failed to make this during Week #2.  This will gt accomplished this week.  Having pizza ready to go is awesome and much healthier and a heck of a lot better tasting than store bought frozen pizza.  I'll be using this recipe from Skinny Mom's Kitchen.
 
Homemade Marinara Sauce:  I make a big pot of sauce about once every month to 1 1/2 months, depending on how much we use.  This is one thing I have always made a large batch of and froze.  Sorry there is not a recipe for this marinara sauce.  It is something I learned by watching.  I don't think anyone in my family has ever measured the ingredients and written it down. 
 
2x Lasagna:  I will posting this recipe this week after I make the trays of lasagna.  Having something like lasagna in the freezer is great.  I'll be giving on tray to my parents to have on hand.  Our trays will probably be in the freezer for some time being that we don't have lasagna often.  But when we are craving it, all the work will be done!
 
2x Healthy Baked Chicken Nuggets:  This recipe is delicious!  Freezing them will be an experiment for me.  I have to research a bit more to find out if I should bake them completely or partially before freezing.  I found the recipe over at SkinnyTaste.  I highly recommend this website to everyone!  Her recipes are practical, easy to make and absolutely delicious!  Did I mention they are also very healthy?  Can't beat that!

6 Week Freezer Cooking Challenge-Week #2 Results

 
 
 
 I know...I know this post is late!  But don't abandon me just yet!  I have a good reason.  I spent several hours this morning hard at work on the soon-to-be new website for Live Frugal.  Live Happy.  I only have a few more hours of work to put into it and we'll be live!  I'm so excited about the new site.  Not only do I have more options and control over it but it will function properly.  This means you, my dear reader, will finally be able to comment without issues or registering.  I'm going to work very hard to get the new site finished by Sunday or Monday!  Look for updates on Facebook or Twitter.
 
 
Now on to my Week #2 Results.  I did not get everything done that I had planned.  Unfortunately, the hubbie came down with a bad head cold.  What's that have to do with my freezer cooking?  Well, it has everything to do with it honestly.  Like many other couples, Rich & I work as a team at home & with our children.  When one team player is out of the game, the other one has to pick up all the slack.  So, basically, I ran out of time & energy this week.  However, under the circumstances, I feel that I did get a lot accomplished.
 
 

Here's a Recap My Week #2 Game Plan

 
Southwest Roll-ups: I found this recipe over a year ago on Money Saving Mom. Since then, they've become a favorite of mine & the hubbies. Our kids do not eat these. I made them without cheese for Roman to try, he's just not into them. Riley won't even try. But nevertheless, we still love them! I'll use 2 cups of shredded chicken from last week & homemade refried beans from the freezer. I happen to have all ingredients on hand for these and making them will be breeze!
 
Banana Nut Muffins: I ended up scoring a "Ready-To-Eat" bag of bananas at the store for 99¢. There were 9 bananas in the bag. We have 6 left now. So tomorrow, I plan to make muffins with them. Healthy, yummy muffins! Tammy at Skinny Mom's Kitchen has a simply amazing recipe for Banana Nut Muffins. I will adapt the recipe to be dairy free since Roman adores these muffins!
 
Banana Nutella Muffins: This recipe is also from Skinny Mom's Kitchen. Honestly, Tammy has baking healthy down the science! Although these are not dairy free, I'll still make them for Riley since they are her favorite. And I'll use up the rest of those bananas!
 
Sausage & Egg Breakfast Cups: I need to make more of these! They were such a hit in our house. Plus, they make weekday mornings so easy. Simply heat up the egg cup and squish it between whole wheat toast or english muffin or you can eat it with a fork. Whatever floats your boat! Roman like his on a toasted hamburger bun!
 
Pizza Dough: I know, I just made pizza dough. But here's the deal, one batch makes 2 12" pizzas. I make one 12" pizza with cheese for Rich, Riley & I. For Roman, I cut off a ball of dough and make him a separate pizza with just sauce and 2 chopped up meatballs as a topping. So, in the end, I'm left a little less than what is needed for another 12" pizza plus Roman's pizza. My plan is to make 1 recipe of pizza dough. I'll then split into portions...1 12" portion and several small portions for Roman. This way, I'll will have enough dough on hand when the next pizza night rolls around. This is recipe I use and we love it! Of course, I leave out the cheese.
 
 
 
 

My Week #2 Results

 

Southwest Roll-ups:  FAIL!  I did not get around to making these this week.  I still want to make them and will probably add them to My Week #3 Game Plan.
 
Pizza Dough: FAIL!  I know...I know...it's the easiest thing in the world to make.  Just dump the ingredients in the bread machine, push a button and done.  But I got so caught up in everything else that was going on this week, I pretty much forgot about making pizza dough.  I will most likely add this to My Week #3 Game Plan.
 
 
Banana Nut Muffins: SUCCESS!  I made these on Wednesday afternoon.  I adapted the recipe to be dairy free to fit Roman's needs.  He absolutely loves these muffins!  And I love feeding them to him.  They are wholesome, nutritious and far better than prepackaged snacks from the store.  I individually wrap them, pack them in a zip top bag and freeze them.  I can throw one is his lunchbox and it'll thaw in plenty of time.
 
Banana Nutella Muffins: SUCCESS!  I made these right after the Banana Nut Muffins since I already had everything out.  These are not dairy free because Nutella contains milk.  However, they are a favorite of Riley's.  Rich & I are pretty fond of them as well.  Another easy healthy snack to have on hand.
 
Sausage & Egg Breakfast Cups: SUCCESS!  I'm glad I decided to add these to my game plan again.  When I looked in the freezer at the ones made last week, we only had 4 left.  These are quickly becoming a favorite for school day breakfast.  Now we are stocked up on them and I shouldn't have to make them for awhile...I think!

6 Week Freezer Cooking Challenge-Week #2 Game Plan


  Today kicks off Week #2 of the 6 Week Freezer Cooking Challenge!  I enjoyed having these goals to work towards last week and I'm looking forward to doing it again!
 
 

My Week #2 Game Plan

 
Southwest Roll-ups:  I found this recipe over a year ago on Money Saving Mom.  Since then, they've become a favorite of mine & the hubbies.  Our kids do not eat these.  I made them without cheese for Roman to try, he's just not into them.  Riley won't even try.  But nevertheless, we still love them!  I'll use 2 cups of shredded chicken from last week & homemade refried beans from the freezer.  I happen to have all ingredients on hand for these and making them will be breeze!

6 Week Freezer Cooking Challenge-Week #1 Update



Week #1 of the 6 Week Freezer Cooking Challenge is coming to a close and I'm very satisfied with my results.  At times, I didn't think I would get everything done that I had planned.  And guess what?  I was right!  And that's OK.  Overall, it was a very productive week!

Crockpot Shredded Chicken: 2.5 lbs. Recipe coming soon!
 

Homemade Chicken Bone Broth(Stock): I will use the bones left from making Crockpot Shredded Chicken to make homemade chicken stock. For more information on how to make bone broth and the benefits, please read this post from Kitchen Stewardship.

 
This is an experiment for me. I'll let you know how it goes!
 

Chicken Sausage & Egg Breakfast Cups: This recipe can be found at Skinny Mom's Kitchen. I will be adapting the recipe to fit my son's dairy free diet. This will be my first time making these so I probably won't make a ton. 
 

4x Granola Bars: OK these aren't technically freezer food. But they are stored in the fridge, so I think they count! Making healthy convenient snacks is just as important as making healthy meals. There are a few variations of granola bars over at The Marathon Mom. I plan to make at least 2 different types.

 

My Week #1 Results 

 
Crockpot Shredded Chicken: SUCCESS!  I did get this accomplished.  I ended up making about 3lbs. of shredded chicken breast.  I planned on using bone in chicken breasts that I had in the freezer.  After taking them out, I noticed that they had freezer burn.  Sadly, I had to trash them.  So, I used boneless skinless chicken breasts instead.  In the end, I had 6 cups of shredded chicken.  I packed them in 2 cup portions since that is a typical amount for most recipes I use shredded chicken for.
 
Homemade Chicken Bone Stock: FAIL! This basically got nixed since I didn't have chicken bones left from making shredded chicken.  I will be putting this back into my plan in 2-3 weeks when after we've eaten the shredded chicken I made this week.
 
Chicken Sausage & Egg Breakfast Cups:  SUCCESS!  I had a few hiccups with these as well.  I ended up using regular pork sausage instead of chicken sausage.  Ya...what I thought was chicken sausage in my freezer was really Italian sweet sausage.  What can I say?  Sausage links tend to look the same when frozen!  Who am I trying to kid?  Last week, I was fighting off an awful cold.  My head felt like an ocean.  Anyhow, it all worked out great.  The eggs cups are a HUGE hit at my house!  I adapted them by using about 1/4 cup of water to replace the milk.  Almond milk in eggs just doesn't sound that good to me.  Using water was a successful substitute.  I also left out the cheese.  I can always add cheese to them when reheating.  I only made one dozen of these this week.  I plan to include them again in my Week #2 Game Plan. 
 
My other hiccup with these was they stuck awfully bad.  I used my Misto loaded with Safflower oil, but it didn't work.  I'm trying to come up with a solution.  Maybe using real butter to grease the cups?  Or liners?  But I'm not sure if they will stick to the liner...  Suggestions are welcome on this one!
 
4x Granola Bars: SUCCESS! (sorta)  So after I made 2 batches of these, I decided to stop.  Here's why...I wasn't sure how well they would freeze and I was standing there looking at 24 freshly made yummy granola bars thinking...will we eat more than this in 7-10 days?  I didn't think we would.  Well, I may have been wrong.  I made these on Monday evening.  As of now, we have about 14 bars left.  In just 3 days, we went through 10 bars already!  I don't think I have to tell you how downright delicious and kid friendly these bars are! 
 
Both batches were Chocolate Granola Bars, so why do they look like different bars in the picture above.  Well, I'm impatient as a child on Christmas morning!  So, instead of waiting for the mixture to cool before adding the chocolate chips...I just went ahead and dumped them in.  Of course, they melted and produced a wonderful uniform chocolate taste in every bite! 
 
For the second batch, I went and fiddled around with my new website (more on that VERY soon) then I started some laundry and ended up back at my computer.  I think I stopped to look out the window at a squirrel in the yard and that sidetracked me again...ya, blame it on my A.D.D.!  So after wondering around the house and getting next to nothing accomplished, I checked on the mixture and was cool!  I mixed in the chocolate chips, threw it in a pan and popped it in the fridge to set up.  More waiting...maybe another squirrel, not really sure.  Finally, they were set and ready for a taste test.   WOWZA!  They are amazing!
 
Ahh yes, my changes to the original recipe:
 
1.  I used coconut oil in place of the butter.
2.  I omitted the coconut flakes because...well I forgot to buy some. 
3.  I added 2 tablespoons of ground flax seed.  I wanted to make up for that missing coconut.
4.  I also only used 1/4 cup of honey.  1/3 cup just seemed like too much.  They were plenty sweet enough for us.
 
If you are interested in making these bars but discouraged due to an allergy to one of the ingredients, please read through the comments over at The Marathon Mom.  There are suggestions upon suggestions of suitable substitutions for these bars including gluten free & nut free. 

 
Bonus Freezer Cooking: This was completely unplanned.  On Wednesday, I tried a new pizza dough recipe.  I didn't realize that the recipe would make enough dough for two 12" inch pizzas.  The recipe turned out to be great!  I frozen the extra dough to use later!
